As a young man, from the moment I first held a sharpening stone in my hand, I have sought to hone the craft of knife sharpening. There are some deep rooted traditions and questions when it comes to knife sharpening that everyone who sharpens a knife will eventually encounter. Who’s knife is the sharpest? Which knives can it actually sharpen? How steep is the learning curve when it comes to sharpening?
As stated before, I have reviewed and handled a plethora of sharpening systems. From the cheap commonly found store bought sharpeners, to the very expensive sharpeners designed and produced for knife makers and fast paced working environments like a commercial kitchen. To name them all would be a task in and of itself.
